  Diary of a Lazy Blogger #12 : Baking Blueberry-Almond Muffins / Blueberry Cheese Tarts
hi guys ! :D
as you all know , i am very enthusiastic when it comes to baking ! (read my macaron post here and brownies post here)
so a few months ago , my mom and i decided to make blueberry muffins ! i know right , how efficient of me , blogging it now . but then again , it IS diary of a lazy blogger , and i AM lazy hahah .

and done !!!!! YAYYYY . sorry i don’t have the recipe for this cos it’s an old recipe that my mom cut out and kept for years .

moving on !!

last week i was feeling very hyped up cos i had just finished my Class Test 2 so i decided to bake blueberry cheese tarts , which are one of my favourite sweet pastries of all time :3 and also because i love tarts . i think i eat tarts for mainly the tart itself , not its filling . hahahah

ingredients ! super easy to find :D i couldn’t find blueberry syrup so i used blueberry jam instead :) the cream cheese and whipping cream can be found near the dairy products section in the supermarket . (also i advise you to buy more moulds . i bought only one and regretted cos i had to re-use the mould at least 7 times !!!)

most tiresome part : putting the dough into the mould . as mentioned above , i stupidly bought only ONE mould –___- so it was super troublesome for me and also a waste of electricity for my oven .

done !!! i had so much dough that i stayed up till 2am just to wait for it to finish baking D: again , strongly advisable to buy at least 2 moulds .

went to sleep after that and woke up early the next morning to complete my blueberry cheese tarts :D

test-baked a few according to the recipe , which is 200 Celcius for 10 mins .. uh not good . it turned out like this :x

so i tried my own , 180 Celcius for 7.5 mins and it turned out all well ! :)

yum :9 also now i have like 10000 tarts hahahah so if you want some , don’t hesitate to ask for it :D

just remember to change your oven settings accordingly :)

after that i still had leftover cheese so i decided to invent my own recipe and made mini cheesecakes :D

honestly i think these cakes tasted better than the tarts LOL :x the base is biscuits btw , i did not burn my cakes haha . should’ve put more choco chips though .
